🫐 1. No-bake blueberry cheesecake

Ingredients:

  • 200 g digestive biscuits
  • 100 g melted butter
  • 500 g cream cheese
  • 200 ml whipping cream
  • 150 g powdered sugar
  • 300 g fresh or frozen blueberries
  • 2 tablespoons lemon juice
  • 10 g gelatin + 50 ml water

Preparation:

  1. Crush the biscuits and mix them with the melted butter. Place the mixture in a baking dish with a removable bottom and press well. Leave to cool for 30 minutes.
  2. Soak the gelatin in cold water for 10 minutes, then dissolve it in a bain-marie.
  3. Mix the cream cheese with the powdered sugar and lemon juice. Add the melted gelatin and the whipped cream.
  4. Gently mix 200 g of blueberries into the mixture and pour it over the biscuit base.
  5. Decorate with the remaining blueberries and leave in the refrigerator for at least 4 hours.

🫐 2. Fluffy Blueberry Muffins

Ingredients (12 pieces):

  • 250 g flour
  • 150 g sugar
  • 2 eggs
  • 120 ml vegetable oil
  • 200 ml plain yogurt
  • 1 sachet baking powder
  • 1 teaspoon vanilla essence
  • 200 g blueberries

Method of preparation:

  1. Preheat the oven to 180°C and prepare a muffin tray with baking paper.
  2. Beat the eggs with the sugar, then add the yogurt, oil and vanilla.
  3. Incorporate the sifted flour with baking powder.
  4. Add the blueberries and mix gently.
  5. Pour the mixture into the tins and bake for 20-25 minutes or until a toothpick comes out clean.

🫐 3. Blueberry Clafoutis (French dessert)

Ingredients:

  • 300 g blueberries
  • 4 eggs
  • 100 g sugar
  • 200 ml milk
  • 100 ml liquid cream
  • 100 g flour
  • 1 sachet vanilla sugar
  • a pinch of salt

Preparation method:

  1. Preheat the oven to 180°C and grease a baking tray with butter.
  2. Sprinkle the blueberries in the tray.
  3. Mix the eggs with the sugar and vanilla sugar. Add the cream, milk, sifted flour and a pinch of salt.
  4. Pour the mixture over the blueberries.
  5. Bake for 35-40 minutes. Let cool and sprinkle with powdered sugar before serving.
